  • 3 medium russet potatoes
  • 12 tablespoons olive oil
  • 2 tablespoons butter (softened)
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese (divided)
  • 2 slices bacon (cooked and crumbled)
  • Kosher salt and black pepper (to taste)
  • Garlic powder and onion powder

Instructions

  1. Preheat air fryer to 400°F (204°C). Wash and dry potatoes, brush with olive oil, and sprinkle with salt. Poke holes in each potato.
  2. Cook potatoes in preheated air fryer for 30 minutes, flipping halfway through until tender.
  3. Let cool for 10 minutes, then cut each potato in half lengthwise and scoop out most flesh into a mixing bowl.
  4. Mash the potato flesh with butter, seasonings, cheese (reserve some), and sour cream until smooth.
  5. Fill potato skins with the mixture, top with remaining cheese and bacon bits.
  6. Return stuffed potatoes to air fryer for another 5–7 minutes until heated through.
