  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 cup quick oats
  • 1/4 cup unsalted butter (melted)
  • 24 ounces full-fat cream cheese (room temperature)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch (or 2 tablespoons all-purpose flour)
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (room temperature)
  • 3 large eggs (room temperature)
  • boiling water (for the water bath)
  • salted caramel sauce

Instructions

  1. Preheat the oven to 350Β°F (180Β°C). Prepare a 9-inch springform pan by wrapping it in tin foil and greasing it with non-stick spray.
  2. For the crust, mix graham crumbs, brown sugar, cinnamon, and melted butter until combined. Press into the bottom of the prepared pan.
  3. For the apple filling, peel and slice apples, then toss them with brown sugar and cinnamon.
  4. In a mixing bowl, blend cream cheese, granulated sugar, brown sugar, cinnamon, cornstarch, vanilla extract, sour cream, and eggs until smooth.
  5. Layer half of the cheesecake mixture over the crust, add apple filling on top, then pour remaining cheesecake mixture over apples.
  6. Bake in a water bath for 55 minutes or until set. Allow to cool gradually in the oven before refrigerating overnight.
