- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp kosher salt
- 2 tsp ground cinnamon
- 1/4 cup unsalted butter (melted)
- 1/4 cup granulated sugar
- 1 large egg
- 1/2 tsp vanilla extract
- 1/2 cup unsweetened applesauce
- 1 1/2 cups finely diced Honeycrisp or Gala apples (about 2 medium)
- For the glaze: 2 cups powdered sugar
- 1/3 cup + 2 tbsp apple cider or juice
Instructions
- 1. Preheat your oven to 400°F (200°C) and grease a nonstick baking sheet.
- 2. In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.
- 3. In another large bowl, combine melted butter and sugar until blended. Add egg, vanilla extract, and applesauce; whisk until smooth.
- 4. Gradually add dry ingredients to wet mixture until combined. Fold in diced apples gently.
- 5. Drop tablespoon-sized portions onto the prepared baking sheet.
- 6. Bake for about 10 minutes until golden brown.
- 7. While they bake, prepare the glaze by whisking powdered sugar with apple cider until smooth.
- 8. Once baked, brush warm fritters with glaze and broil briefly for caramelization.
- 9. Let cool for about 15 minutes before serving.
