- 6–8 chicken drumsticks
- 3 tablespoons olive oil
- 2 tablespoons brown sugar
- 1 tablespoon smoked paprika
- 1 cup uncooked white rice
- 1 and 1/3 cups low-sodium chicken broth
- 2/3 cup water
- 1 medium yellow onion, chopped
- 3–4 cloves garlic, minced
Instructions
- Preheat your oven to 350 degrees F.
- In a small bowl, mix olive oil, brown sugar, smoked paprika, salt, black pepper, and herbs into a paste. Rub this over the chicken drumsticks.
- Melt butter in a saucepan over medium heat; cook onions until softened, then add garlic.
- Transfer the onion-garlic mixture to a baking dish. Stir in uncooked rice and remaining salt.
- Boil chicken broth and water; pour over the rice mixture in the baking dish.
- Place chicken on top of the rice along with lemon wedges. Cover tightly with foil.
- Bake for about 30 minutes covered; remove foil and bake another 20 minutes until cooked through.
