- 1 head of garlic (halved)
- 5 sprigs thyme

- 150g unsalted butter (softened)
- 5 garlic cloves (minced)
- Salt and black pepper
- Beef broth
- Dry red wine
Instructions
- Preheat oven to 325°F (165°C).
- Season the rib roast with salt and pepper.
- Mix softened butter with minced garlic and chopped herbs; rub over the meat.
- Place onion, garlic, and herbs in a roasting pan; arrange the roast on top.
- Add beef broth and red wine around the roast.
- Insert a meat thermometer into the thickest part of the meat.
- Roast for about two hours or until desired doneness (medium-rare at 125°F).
- Allow to rest for at least 20 minutes before slicing.
