  • 1 onion (quartered)
  • 1 head of garlic (halved)
  • 5 sprigs thyme
  • 3 sprigs rosemary
  • 150g unsalted butter (softened)
  • 5 garlic cloves (minced)
  • Salt and black pepper
  • Beef broth
  • Dry red wine

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Season the rib roast with salt and pepper.
  3. Mix softened butter with minced garlic and chopped herbs; rub over the meat.
  4. Place onion, garlic, and herbs in a roasting pan; arrange the roast on top.
  5. Add beef broth and red wine around the roast.
  6. Insert a meat thermometer into the thickest part of the meat.
  7. Roast for about two hours or until desired doneness (medium-rare at 125°F).
  8. Allow to rest for at least 20 minutes before slicing.
