  • 16 oz Mascarpone cheese (450g), cold
  • 4 egg yolks
  • 3/4 cup sugar (165g)
  • 1 tsp vanilla extract
  • 1 1/2 cups heavy cream (360g)
  • ~30 ladyfingers
  • 1 1/2 cups strong black coffee
  • 2 tbsp cocoa powder for dusting

Instructions

  1. Brew strong black coffee and let it cool.
  2. In a mixing bowl, combine mascarpone cheese, sugar, and vanilla until smooth. In another bowl, whip heavy cream to stiff peaks.
  3. Gently fold whipped cream into the mascarpone mixture.
  4. Quickly dip ladyfingers in coffee and layer half at the bottom of a baking dish. Spread half of the mascarpone mixture on top.
  5. Repeat with remaining ladyfingers and mascarpone mixture.
  6. Cover and refrigerate for at least 4 hours or overnight.
  7. Dust with cocoa powder before serving.
