  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 1 Tbsp milk (optional)
  • 1 (10 oz.) bag peanut butter chips
  • 1/4 cup granulated sugar
  • flaky sea salt (optional)

Instructions

  1. Preheat your oven to 375°F and line cookie sheets with parchment paper.
  2. In a bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt.
  3. Cream together cold butter, brown sugar, granulated sugar, and peanut butter until smooth.
  4. Add the egg, egg yolk, vanilla extract, and milk (if using) and mix until combined.
  5. Gradually add dry ingredients until incorporated. Fold in peanut butter chips.
  6. Scoop dough onto prepared sheets and shape into balls. Optionally roll in granulated sugar.
