  • 1 tsp olive oil
  • ⅓ cup white onion, chopped
  • 1 jalapeño, finely chopped
  • 2 (15 oz) cans black beans, drained and rinsed
  • ¾ cup tomato, chopped
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp cumin
  • ½ tsp salt
  • 2 Tbsp hot sauce
  • 6 large tortillas (burrito size)
  • 6 tostadas
  • 6 small fajita size tortillas (to close the wrap)
  • ⅓ cup sour cream
  • 1½ cup cheese, shredded
  • 1½ cup romaine, shredded
  • ½ cup salsa (optional)
  • 1 avocado, sliced thin (optional)
  • 2 Tbsp cilantro, chopped

Instructions

  1. Prepare your ingredients by rinsing the black beans and chopping the onion, jalapeño, and tomato.
  2. In a skillet, heat olive oil over medium heat. Sauté onions until translucent, then add garlic powder, chili powder, paprika, cumin, salt, tomatoes, black beans, jalapeños, and hot sauce. Simmer briefly and remove from heat.
  3. On a large tortilla, layer the black bean mixture in the center. Top with cheese, sour cream, romaine lettuce, optional avocado slices, and a tostada. Place a small tortilla on top and fold the large tortilla around it securely.
  4. In the skillet over medium heat, cook the wrap folded side down for 2–3 minutes until golden brown; flip to cook the other side for another 3 minutes.
  5. Repeat with remaining wraps and serve warm with your choice of optional toppings.
