  • 1 tablespoon light soy sauce
  • 1 tablespoon dry sherry
  • 2 tablespoons peanut oil
  • 1/2 cup chicken broth
  • 2 tablespoons light soy sauce
  • 2 tablespoons dark soy sauce
  • 1 tablespoon cornstarch
  • 1 1/2 tablespoons sugar
  • 2 teaspoons coarsely ground black pepper
  • 1/8 teaspoon salt
  • 1 tablespoon minced ginger
  • 2 cloves garlic, minced
  • 1/2 white onion, chopped
  • 2 bell peppers, chopped (mixed colors)

Instructions

  1. Marinate sliced chicken with soy sauce, dry sherry, and cornstarch for 10-15 minutes.
  2. In a small bowl, combine sauce ingredients: chicken broth, soy sauce, dark soy sauce, cornstarch, sugar, black pepper, and salt.
  3. Heat oil in a large skillet over medium-high heat. Cook marinated chicken until lightly browned; set aside.
  4. Stir-fry ginger and garlic in the same skillet, then add chopped onions and bell peppers until softened.
  5. Pour in the prepared sauce and bring to a simmer until thickened; add back the chicken to coat evenly.
  6. Serve hot over rice or noodles.
