  • 1/2 pound ground breakfast sausage
  • 6 large eggs (beaten)
  • 8 slices Colby-Jack cheese
  • 4 tablespoons soft butter (divided)
  • 8 slices sourdough bread

Instructions

  1. In a non-stick skillet, cook and crumble ground sausage until browned. Transfer to a bowl lined with paper towels.
  2. In the same skillet, melt 2 tablespoons of butter over medium-high heat and scramble the beaten eggs until just set. Remove from heat.
  3. Combine sausage and scrambled eggs in a bowl.
  4. Butter one side of each slice of sourdough bread. In the skillet, place one slice butter-side down, add a slice of cheese, then half a cup of the egg-sausage mixture, and top with another cheese slice and another piece of buttered bread.
  5. Cook until golden brown on both sides (about 3-4 minutes per side).
  6. Repeat with remaining ingredients.
