  • 1 cup white onions (chopped)
  • 1 clove garlic (finely diced)
  • 1/4 cup vegan butter
  • 1/2 cup all-purpose flour
  • 3 cups vegetable broth
  • 4 cups rice milk (plain, unsweetened)
  • 3 heaping cups broccoli (finely chopped)
  • 1 1/2 heaping cups julienned carrots
  • 1 cup vegan cheddar cheese
  • Salt & pepper to taste

Instructions

  1. Melt the vegan butter in a large pot over medium heat.
  2. Add chopped onions and diced garlic; sauté until soft and fragrant (5-7 minutes).
  3. Stir in all-purpose flour to create a smooth roux.
  4. Whisk in vegetable broth and rice milk until well combined.
  5. Bring to a boil, then reduce heat to medium.
  6. Add broccoli and carrots; cook until tender (about 10 minutes).
  7. Stir in vegan cheddar cheese until melted and creamy.
  8. Remove about 1/4 of the soup and blend until smooth; return to pot.
  9. Season with salt and pepper, then serve hot.
