- 1 cup light brown sugar (packed)
- 1 large egg
- 1 tablespoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon ground cinnamon

- 1 cup shredded carrots
- 4 ounces cream cheese (room temperature)
- 1/4 cup granulated sugar
- 1 large egg yolk
- 3/4 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F. Spray an 8×8 baking pan with non-stick spray or line it with parchment paper.
- In a mixing bowl, combine melted butter and light brown sugar until smooth. Mix in the egg and vanilla extract.
- In another bowl, whisk together flour, cinnamon, baking powder, and salt. Gradually add this to the wet mixture and fold in the shredded carrots.
- Pour the batter into the prepared pan and bake for 30–40 minutes until a toothpick inserted comes out clean.
- While baking, prepare the cream cheese topping by mixing cream cheese and granulated sugar until creamy. Add egg yolk and vanilla; stir until smooth.
- Once bars are slightly cooled, spread the cream cheese topping over them. Allow to cool completely before slicing into squares.
