  • 2 cups shredded carrots
  • 8 oz cream cheese (cold)
  • 8 Tbsp butter (room temperature)
  • 1 cup powdered sugar

Instructions

  1. Preheat oven to 375°F and line a jelly roll pan (10×15 inches) with parchment paper.
  2. In a bowl, mix flour, baking powder, baking soda, salt, and spices; set aside.
  3. In another bowl, whisk eggs and blend in granulated sugar, oil, and vanilla.
  4. Combine dry ingredients with wet ingredients and fold in shredded carrots.
  5. Spread batter evenly in the pan; bake for 10–13 minutes until springy.
  6. Immediately roll the cake in parchment paper and let cool.
  7. For frosting, beat cream cheese until smooth; add butter gradually followed by powdered sugar and vanilla.
  8. Unroll the cooled cake, spread frosting on top except for one edge, then re-roll tightly.
  9. Chill for at least an hour before slicing.
