  • 1/4 tsp ground nutmeg
  • 1/2 tsp ground cardamom
  • 1/8 tsp ground cloves
  • 1 1/2 tsp salt
  • 2 tbsp (25 g) granulated white sugar
  • 2 eggs
  • 1 tbsp vanilla extract
  • 1/2 cup (112 g) unsalted butter
  • 1 cup (220 g) light brown sugar
  • 1 1/2 tsp ground cinnamon (for filling)
  • 3/4 tsp ground ginger (for filling)
  • 1/4 tsp ground allspice (for filling)
  • 1/4 tsp ground nutmeg (for filling)
  • 3/4 tsp ground cardamom (for filling)
  • 1/8 tsp ground cloves (for filling)
  • 1/3 cup (116 g) honey
  • 1 1/2 tsp vanilla extract (for filling)
  • 6 oz (170 g) cream cheese
  • 3/4 cup (97 g) powdered sugar
  • 1 1/2 tsp vanilla extract (for frosting)
  • 1/2 tsp ground cinnamon (for frosting)

Instructions

  1. Warm milk to 110°F. Combine with yeast and sugar; let sit for 5–10 minutes until foamy.
  2. In a mixing bowl or stand mixer, add flour, spices, salt, eggs, vanilla extract, and softened butter to the yeast mixture. Mix until a soft dough forms.
  3. Knead the dough for 5–7 minutes until smooth and elastic.
  4. Place in a greased bowl, cover, and let rise in a warm place until doubled (60–90 minutes).
  5. Prepare the filling by mixing brown sugar and spices in a bowl.
  6. Roll out risen dough into a rectangle and spread the filling evenly before rolling it up tightly.
  7. Slice into rolls and place in a greased baking dish. Let rise again for about 30 minutes before baking at 350°F for 20–25 minutes.
