  • 2 tablespoons tomato paste
  • 1½ cups long-grain white rice (dry)
  • 2 cups shredded cheese

Instructions

  2. Stir in garlic and taco seasoning; cook for an additional 30 seconds.
  3. Add beef broth, Rotel, and tomato paste; bring to a boil.
  4. Stir in rice; return to a boil then cover and reduce heat to low, simmering for about 15 minutes.
  5. Sprinkle cheese over the rice and cook until melted (about 5 minutes).
