  • 1 3/4 cups all-purpose flour

  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup granulated sugar (for topping)
  • 1/2 tsp pumpkin pie spice (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix granulated sugar and pumpkin pie spice for the topping; set aside.
  3. Cream together softened butter and brown sugar until fluffy.
  4. Add egg yolks and vanilla; mix well.
  5. Stir in pumpkin puree until blended.
  6. In another bowl, whisk flour, pumpkin pie spice, baking soda, baking powder, and salt. Gradually add to the wet ingredients until just combined.
  7. Scoop dough onto the prepared sheet and sprinkle with spiced sugar topping.
  8. Bake for about 12 minutes or until lightly golden on the edges.
