Ingredients

  • 1 cup graham cracker crumbs
  • 4 tbsp butter (melted)
  • 10 oz semi-sweet chocolate (chopped)
  • 16 oz cream cheese (softened)
  • 2 cups heavy cream (room temperature)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2/3 cup creamy peanut butter
  • 6 oz semi-sweet chocolate (for ganache)
  • 1/4 cup heavy cream (for ganache)

Instructions

  1. Prepare 12 baking cups or mini springform pans.
  2. For the crust, combine graham cracker crumbs and melted butter; press into the bottom of each cup.
  3. Melt the first portion of semi-sweet chocolate in a microwave-safe bowl until smooth, then let cool slightly.
  4. In a large bowl, whisk together cream cheese, powdered sugar, and vanilla until smooth. Mix in heavy cream until thick.
  5. Divide the mixture; fold melted chocolate into one portion and spread over the crust. Refrigerate to set.
  6. Mix creamy peanut butter into the reserved cheesecake mixture and layer on top of the chocolate layer.
  7. For the ganache, melt remaining chocolate with heavy cream until smooth; pour over each cheesecake layer.
  8. Garnish as desired and refrigerate again before serving.
