  • 3 overripe bananas
  • 4 tbsp melted vegan butter
  • 3/4 cup maple syrup
  • 1 cup almond or oat milk
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour (regular or gluten-free)
  • 1 cup rolled oats
  • 1/3 cup light brown sugar
  • 2 tbsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla extract until well blended.
  3. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt. Gradually add to the wet mixture until just combined.
  4. For the swirl mixture: mix melted vegan butter, brown sugar, and cinnamon in a small bowl.
  5. Pour half the batter into a greased loaf pan; drizzle half of the swirl mixture over it. Add remaining batter and finish with the rest of the swirl. Gently swirl through the batter using a knife.
  6. Bake for about 45 minutes until a toothpick comes out clean.
  7. Cool for 10 minutes before transferring to a wire rack.
