Ingredients
- 3 overripe bananas
- 4 tbsp melted vegan butter
- 3/4 cup maple syrup
- 1 cup almond or oat milk
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour (regular or gluten-free)
- 1 cup rolled oats
- 1/3 cup light brown sugar
- 2 tbsp cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla extract until well blended.
- In another bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt. Gradually add to the wet mixture until just combined.
- For the swirl mixture: mix melted vegan butter, brown sugar, and cinnamon in a small bowl.
- Pour half the batter into a greased loaf pan; drizzle half of the swirl mixture over it. Add remaining batter and finish with the rest of the swirl. Gently swirl through the batter using a knife.
- Bake for about 45 minutes until a toothpick comes out clean.
- Cool for 10 minutes before transferring to a wire rack.
