  • 4 pounds yellow potatoes
  • 2 tablespoons kosher salt
  • 1/2 teaspoon baking soda
  • 1/4 cup duck fat (or olive oil)
  • 1 whole head garlic
  • 1 tablespoon fresh rosemary

Instructions

  1. Preheat your oven to 450°F and place a large roasting pan inside.
  2. Rinse potatoes under cold water, then add them to a stock pot with cold water, kosher salt, and baking soda. Boil until barely fork-tender, about 25 minutes.
  3. Drain in a colander and let them dry completely.
  4. Remove the hot roasting pan from the oven, melt the duck fat in it, add the potatoes, season with salt and pepper, and nestle in the garlic.
  5. Roast for about 55-60 minutes, tossing every 20 minutes until golden brown.
  6. After cooking, mash roasted garlic with rosemary and olive oil; toss this mixture with the potatoes before returning them to the oven for an additional 5 minutes.
