Ingredients
- 4 boneless chicken thighs
- 1/2 lemon (zest and juice)
- 1/4 cup chicken broth
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1/2 cup Jasmine rice (uncooked)

Instructions
- Place the chicken thighs in the bottom of the Crock-pot.
- In a small bowl, mix lemon zest, juice, and chicken broth. Pour over the chicken.
- Combine seasonings in a ramekin and sprinkle over the chicken.
- Top with minced garlic.
- Cook on high for 2-3 hours or low for 6-8 hours until tender.
- About 20 minutes before serving, add water and rice to the pot; cover and cook until rice is tender.
- Serve warm, garnished with fresh herbs if desired.
