  • 2 1/4 cups graham cracker crumbs
  • 3 tbsp sugar
  • 1 tsp ground cinnamon
  • 1/2 cup salted butter, melted
  • 24 ounces cream cheese, room temperature
  • 1 cup sugar
  • 3 tbsp all purpose flour
  • 3/4 cup sour cream, room temperature
  • 1 1/2 tbsp vanilla extract
  • 1 tsp ground cinnamon
  • 3 large eggs, room temperature
  • 2 large apples, chopped
  • 1/4 cup light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/8 tsp ground nutmeg
  • sprinkle of lemon juice
  • 1/2 cup caramel sauce
  • 1/2 cup heavy whipping cream, cold
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a greased 9×13-inch baking dish and bake for 10 minutes.
  2. In another bowl, beat cream cheese until smooth; add sugar and flour, mixing well. Incorporate sour cream, vanilla, ground cinnamon, and eggs one at a time until creamy.
  3. Pour cheesecake filling over the crust and bake for about 50 minutes or until set.
  4. For the apple topping, cook chopped apples with brown sugar and spices until slightly softened. Let cool.
  5. Once cheesecake is completely cooled (at least 4 hours in the fridge), top with apple mixture and drizzle with caramel sauce before serving.
