  • 2 servings dry instant ramen noodle cakes (about 140 g)
  • 10 oz extra firm tofu or assorted veggies (sliced)
  • 1 cup water or vegetable broth
  • 57 tbsp soy sauce
  • 23 tbsp cornstarch
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • Optional toppings: chopped scallions, sesame seeds

Instructions

  1. In a mixing bowl, combine all sauce ingredients and set aside.
  2. Boil water in a pot and cook the ramen noodles for about 2-3 minutes less than package instructions.
  3. Drain and rinse the noodles under cold water.
  4. In a non-stick pan, sauté tofu or veggies until cooked to your liking.
  5. Pour the prepared sauce into the pan and let it simmer for 2-3 minutes.
  6. Add the drained noodles into the pan and mix well to coat them with the sauce.
  7. Cook together for another 3 minutes until everything is heated through.
  8. Adjust seasoning if needed and garnish with sesame seeds and scallions before serving.
