Ingredients
- 2 servings dry instant ramen noodle cakes (about 140 g)
- 10 oz extra firm tofu or assorted veggies (sliced)
- 1 cup water or vegetable broth
- 5–7 tbsp soy sauce
- 2–3 tbsp cornstarch
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- Optional toppings: chopped scallions, sesame seeds
Instructions
- In a mixing bowl, combine all sauce ingredients and set aside.
- Boil water in a pot and cook the ramen noodles for about 2-3 minutes less than package instructions.
- Drain and rinse the noodles under cold water.
- In a non-stick pan, sauté tofu or veggies until cooked to your liking.
- Pour the prepared sauce into the pan and let it simmer for 2-3 minutes.
- Add the drained noodles into the pan and mix well to coat them with the sauce.
- Cook together for another 3 minutes until everything is heated through.
