  • 500g bread flour
  • 350ml room temperature water
  • 100g active sourdough starter
  • 10g salt
  • 1 cup fresh blueberries
  • 1/3 cup softened cream cheese
  • Zest of 1 lemon
  • 2 tablespoons granulated sugar
  • 2 tablespoons honey (for glaze)
  • 1 tablespoon fresh lemon juice (for glaze)

Instructions

  1. In a mixing bowl, combine bread flour, water, and active sourdough starter. Let rest for 30 minutes before adding salt. Knead until incorporated and let it rise for 4-6 hours, performing stretch-and-fold techniques every 30 minutes.
  2. Prepare the filling by mixing cream cheese, lemon zest, and sugar until smooth.
  3. Gently fold in blueberries during the final stretch-and-fold.
  4. Shape the dough into a rectangle, add the cream cheese mixture in the center, and roll it up like a jelly roll.
  5. Place seam-side up in a banneton and refrigerate overnight for an extended rise.
  6. Preheat your Dutch oven to 250°C (482°F). Bake covered for 20 minutes, then uncover and reduce temperature to 220°C (428°F) for an additional 20-25 minutes until golden brown.
  7. For the glaze, mix honey with lemon juice and brush over warm bread.
