- 1 lb ground chicken
- ⅓ cup almond flour
- ¼ cup fresh parsley, chopped
- 2 tsp fresh dill, chopped
- 3 cloves garlic, minced
- ¼ cup feta cheese, crumbled
- 1 cup orzo pasta
- Juice of 1 lemon
- Zest of 1 lemon
- ½ tbsp onion powder
- 2 tsp dried oregano
- 1 tsp ground cumin
- ½ tsp salt
- ½ tsp freshly cracked pepper
- 1 tbsp extra virgin olive oil
- 2 cups chicken broth
Instructions
- In a mixing bowl, combine ground chicken, almond flour, parsley, dill, garlic, feta cheese, lemon zest, onion powder, oregano, cumin, salt, and pepper. Mix until well blended.
- Form the mixture into meatballs (about 1½ inches) and lightly salt each one.
- Heat olive oil in a skillet over medium heat and sear the meatballs for 3-4 minutes on each side until browned. Cover and cook for another 5-6 minutes until cooked through.
- In the same skillet, bring chicken broth to a boil. Add orzo and cook according to package instructions (about 8-10 minutes). Stir in lemon juice and olive oil once cooked.
- Serve lemon orzo topped with Greek chicken meatballs and garnish with crumbled feta and chopped parsley.
