  • ⅓ cup almond flour
  • ¼ cup fresh parsley, chopped
  • 2 tsp fresh dill, chopped
  • 3 cloves garlic, minced
  • ¼ cup feta cheese, crumbled
  • 1 cup orzo pasta
  • Juice of 1 lemon
  • Zest of 1 lemon
  • ½ tbsp onion powder
  • 2 tsp dried oregano
  • 1 tsp ground cumin
  • ½ tsp salt
  • ½ tsp freshly cracked pepper
  • 1 tbsp extra virgin olive oil
  • 2 cups chicken broth

Instructions

  1. In a mixing bowl, combine ground chicken, almond flour, parsley, dill, garlic, feta cheese, lemon zest, onion powder, oregano, cumin, salt, and pepper. Mix until well blended.
  2. Form the mixture into meatballs (about 1½ inches) and lightly salt each one.
  3. Heat olive oil in a skillet over medium heat and sear the meatballs for 3-4 minutes on each side until browned. Cover and cook for another 5-6 minutes until cooked through.
  4. In the same skillet, bring chicken broth to a boil. Add orzo and cook according to package instructions (about 8-10 minutes). Stir in lemon juice and olive oil once cooked.
  5. Serve lemon orzo topped with Greek chicken meatballs and garnish with crumbled feta and chopped parsley.
