  • 2 cups vanilla wafer cookies, finely ground
  • 5 tablespoons unsalted butter, melted
  • 2 tablespoons light brown sugar
  • 1 tablespoon lime zest, packed
  • 5 large egg yolks
  • 22 ounces sweetened condensed milk
  • 1 cup freshly squeezed lime juice
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the finely ground vanilla wafer cookies, melted butter, and light brown sugar. Mix until fully combined.
  3. Press this mixture firmly into the bottom of a greased 9×13 inch baking pan. Create an even layer.
  4. Place the crust in the preheated oven and bake for about 10 minutes or until lightly golden. Remove from oven and let cool slightly.
  5. In another bowl, whisk together lime zest, egg yolks, and sweetened condensed milk until smooth. Gradually add in freshly squeezed lime juice while continuing to whisk.
  6. Pour this mixture over the cooled crust. Bake again for about 15-20 minutes until set but still slightly jiggly in the center.
  7. Allow the bars to cool at room temperature before refrigerating for at least two hours.
  8. While cooling, beat heavy whipping cream with powdered sugar until soft peaks form.
  9. Once chilled, slice into squares and top each piece with whipped cream before serving.
