Ingredients
- 1 lb ground beef (or beef and pork mix)
- ½ cup panko breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1-inch piece ginger, grated
- 2 tbsp soy sauce
- 1 tbsp gochujang
- ¼ cup honey (or brown sugar) for glaze
- ½ cup mayonnaise for dip
Instructions
- In a mixing bowl, combine ground beef, panko breadcrumbs, egg, garlic, ginger, soy sauce, gochujang, brown sugar, sesame oil, salt, black pepper, and green onions. Mix until combined.
- Form the mixture into meatballs about 1 to 1.5 inches in diameter.
- Cook using either the baking method at 400°F for 18–20 minutes or air fryer at 375°F for 10–12 minutes.
- Prepare the glaze by simmering soy sauce, honey (or brown sugar), gochujang, rice vinegar, sesame oil, garlic, and ginger in a saucepan. Thicken with cornstarch slurry.
- Toss cooked meatballs in the warm glaze until coated.
- For the spicy mayo dip: whisk together mayonnaise, gochujang, lime juice, honey, and garlic powder until smooth.
- Serve glazed meatballs on a platter garnished with sesame seeds and green onions alongside the spicy mayo dip.
