  • 1 lb ground beef (or beef and pork mix)
  • ½ cup panko breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp gochujang
  • ¼ cup honey (or brown sugar) for glaze
  • ½ cup mayonnaise for dip

Instructions

  1. In a mixing bowl, combine ground beef, panko breadcrumbs, egg, garlic, ginger, soy sauce, gochujang, brown sugar, sesame oil, salt, black pepper, and green onions. Mix until combined.
  2. Form the mixture into meatballs about 1 to 1.5 inches in diameter.
  3. Cook using either the baking method at 400°F for 18–20 minutes or air fryer at 375°F for 10–12 minutes.
  4. Prepare the glaze by simmering soy sauce, honey (or brown sugar), gochujang, rice vinegar, sesame oil, garlic, and ginger in a saucepan. Thicken with cornstarch slurry.
  5. Toss cooked meatballs in the warm glaze until coated.
  6. For the spicy mayo dip: whisk together mayonnaise, gochujang, lime juice, honey, and garlic powder until smooth.
  7. Serve glazed meatballs on a platter garnished with sesame seeds and green onions alongside the spicy mayo dip.
