- 2 tablespoons granulated sugar
- 8 tablespoons butter (melted)
- 1 box instant lemon pudding (3.4 oz)
- 1½ cups half and half
- 8 ounces cream cheese (softened)
- ½ cup powdered sugar
- 16 ounces Cool Whip (thawed)
- 1 can blueberry pie filling (21 oz)
Instructions
- Prepare the crust by crushing graham crackers with sugar in a food processor. Mix in melted butter until crumbly. Press into a greased 9×13 baking pan and freeze for 20 minutes.
- Make the lemon filling by whisking pudding mix with half and half until thickened. Beat cream cheese and powdered sugar until smooth, then fold in the pudding mixture and half of the Cool Whip.
- Spread the lemon filling over the chilled crust, top with blueberry pie filling, then layer remaining Cool Whip over it.
- Cover with plastic wrap and refrigerate for at least 8 hours or overnight before serving.
