Instructions
- Prepare the caramel layer by combining sweetened condensed milk, butter, brown sugar, corn syrup, vanilla extract, and salt in a saucepan over medium heat until smooth; set aside to cool.
- For the shortbread crust, beat room temperature butter and powdered sugar until pale; mix in flour and salt to form dough. Press into a greased baking pan and bake at 350°F (175°C) for 15 minutes.
- While the crust bakes, whisk together sugar, flour, cocoa powder, dark chocolate chips, and salt in one bowl; mix eggs, oil, melted butter, water, and vanilla in another bowl before combining them.
- Pour brownie batter over the baked crust followed by drizzling cooled caramel on top without mixing too much.
- Bake for 25-30 minutes until set but fudgy. Allow cooling before preparing ganache by heating cream and stirring in dark chocolate chips until smooth.
- Spread ganache over the brownies and let set before slicing.
