  • 225 g (1 3/4 cups) Plain / All-purpose flour (sieved)
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 175 g (3/4 cup) softened butter
  • 150 g (3/4 cup) regular sugar
  • 150 ml (2/3 cup) milk
  • 2 large eggs (lightly beaten)
  • 1 1/2 teaspoons vanilla extract

Instructions

  1. Preheat the oven to 170°C (325°F). Grease and line a loaf tin.
  2. Combine the flour, baking powder, and salt in a bowl.
  3. In another bowl, cream softened butter and sugar until pale and fluffy.
  4. Gradually add beaten eggs, mixing on low speed; incorporate vanilla extract.
  5. Alternate adding flour mixture and milk into the butter mixture until just combined.
  6. Pour the batter into the prepared loaf tin and smooth the top.
  7. Bake for 60-65 minutes or until a skewer inserted comes out clean.
  8. Allow to cool slightly in the tin before transferring to a cooling rack.
