Ingredients
- 4 oz cream cheese (softened)
- 2 Tbsp powdered sugar
- 1/3 cup pumpkin puree
- 2 cups graham cracker crumbs
- 1/2 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 2 cups white chocolate chips
- 1–2 tsp coconut oil (optional)
Instructions
- In a mixing bowl, beat cream cheese and powdered sugar until light and creamy.
- Mix in pumpkin puree, 1 cup graham cracker crumbs, pumpkin pie spice, and cinnamon until fully combined. Add the remaining graham cracker crumbs and mix again.
- Cover and refrigerate the mixture for at least 30 minutes.
- Line a baking sheet with parchment paper. Scoop out about 1 tablespoon of dough and shape into balls; place on the prepared sheet.
- Chill balls for another 30 minutes. Meanwhile, melt white chocolate in short intervals in a microwave-safe bowl.
- Dip each ball into melted chocolate, allowing excess to drip off before placing back on the sheet.
- Optionally drizzle remaining chocolate on top and add sprinkles or crumbs before they set.
- Refrigerate for an additional 20-30 minutes before serving.
