  • 2 cups Heavy Cream
  • 1/2 cup Unsalted Butter
  • 6 cups Sugar (divided)
  • 1 teaspoon Vanilla Extract
  • 1 1/2 cups Walnuts or Pecans (chopped)
  • 1/4 teaspoon Baking Soda

Instructions

  1. Lightly grease a 9×13-inch baking dish.
  2. In a heavy-bottomed saucepan, melt 2 cups of sugar over low heat for about 20 minutes until fully liquefied.
  3. In a large saucepan, combine the remaining 4 cups of sugar and heavy cream; simmer on low heat.
  4. Stir the melted sugar into the cream mixture until combined.
  5. Raise the heat to medium and cook until the mixture reaches 244°F (softball stage).
  6. Remove from heat, stir in baking soda, butter, and vanilla extract until smooth.
  7. Let the mixture rest for about 20 minutes before adding chopped nuts.
  8. Pour into the prepared dish and let cool for 1-2 hours or overnight before cutting into squares.
