  • 1 small onion (chopped)
  • 1 clove garlic (minced)
  • 3 cups chicken stock or water
  • 1 (15-oz) can diced tomatoes (undrained)
  • 1 (12-oz) box short pasta shapes
  • Β½ cup grated Parmesan
  • ΒΌ cup cream cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. SautΓ© onion, garlic, and optional sun-dried tomatoes for about 2 minutes until softened.
  2. Stir in tomato paste and Italian seasoning; cook for another minute.
  3. Add chicken stock and diced tomatoes, scraping the bottom of the pot. Then add the pasta and season to taste.
  4. Bring to a boil; reduce heat and simmer for 10-15 minutes until pasta is tender. If needed, add extra broth.
  5. Remove from heat and stir in Parmesan and cream cheese until creamy.
