  • 16 baby yellow potatoes
  • ½ stick melted unsalted butter (4 tablespoons)
  • 1.5 teaspoons garlic powder
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt (to taste)
  • ½ cup grated Parmesan cheese
  • ½ cup plain yogurt
  • 1 teaspoon olive oil
  • Fresh dill (finely chopped) to taste

Instructions

  1. Boil the baby potatoes in a large pot of salted water for 15-20 minutes until tender.
  2. Preheat your oven to 400°F (200°C) and line a sheet pan with parchment paper.
  3. In a mixing bowl, combine melted butter, Parmesan cheese, garlic powder, Italian seasoning, and salt.
  4. Drain the boiled potatoes and place them on the prepared sheet pan. Coat them with the butter mixture.
  5. Use a glass to gently smash each potato until flattened but not broken.
  6. Bake for about 30 minutes until golden brown and crispy.
  7. While baking, prepare a yogurt sauce by mixing yogurt with olive oil, salt, and dill.
