  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup jelly (grape or strawberry)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract; mix until well combined.
  4. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture to form a smooth dough.
  6. Scoop about 2 tablespoons of dough and flatten into discs on the prepared baking sheet.
  7. Place about 1 teaspoon of jelly in the center of half of the discs and cover with another disc. Press edges to seal.
  8. Bake for approximately 12-15 minutes until edges are golden brown.
  9. Let cookies cool on the baking sheet for about five minutes before transferring to a wire rack.
