  • 4 cups rice Chex
  • 1 cup peanut butter
  • 1/3 cup powdered sugar
  • 2 cups semi-sweet chocolate chips
  • 1/2 cup powdered sugar (for coating)

Instructions

  1. In a microwave-safe bowl, combine peanut butter and powdered sugar. Heat in 10-second intervals until melted and smooth.
  2. Place rice Chex in a large bowl and crush lightly; then pour the peanut butter mixture over it and stir to combine.
  3. Chill the mixture in the refrigerator for about 30 minutes.
  4. Melt chocolate chips in a double boiler until smooth.
  5. Roll chilled mixture into balls (about 1Β½ tablespoons each) and dip each ball into the melted chocolate until fully coated.
  6. Place on a baking sheet and refrigerate until the chocolate hardens. Roll finished truffles in powdered sugar for added sweetness.
