  • 3 cups low-sodium chicken broth
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon ground cumin
  • 1 tablespoon fresh lime juice

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion until translucent (3-4 minutes). Add garlic, bell pepper, and carrot; cook for another 5 minutes.
  2. Stir in the diced tomatoes and chicken broth. Mix well.
  3. Season with chili powder, smoked paprika, cayenne pepper, ground cumin, salt, and pepper. Bring to a gentle boil; reduce heat and simmer for 10 minutes.
  4. Add shrimp to the pot and cook until pink and opaque (3-5 minutes).
