  • 4 medium jalapeños
  • 1 tablespoon olive oil
  • 4 ounces cream cheese
  • ½ teaspoon garlic salt
  • ¼ teaspoon black pepper
  • ½ teaspoon onion powder
  • 1 cup shredded mild cheddar cheese
  • 6 strips cooked bacon
  • 4 slices Texas toast
  • 4 tablespoons unsalted butter

Instructions

  1. Preheat your oven to 425°F and line a baking sheet with parchment paper.
  2. Brush jalapeños with olive oil and place them on the baking sheet. Roast for about 15 minutes until charred. Let cool.
  3. In a bowl, mix cream cheese, garlic salt, black pepper, and onion powder until creamy. Fold in chopped jalapeños.
  4. Butter one side of each slice of bread. Spread half the cream cheese mixture on the unbuttered side of two slices. Top with bacon and cheddar cheese, then close with another slice of buttered bread.
  5. Cook sandwiches in a skillet over medium heat for 3-5 minutes per side until golden brown and the cheese melts.
