  • 1 whole chicken (45 pounds)
  • 2 tablespoons olive oil
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth
  • 2 tablespoons butter (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, whisk together olive oil, minced garlic, orange zest and juice, honey, soy sauce, fresh herbs, salt, and pepper.
  3. Place the chicken in a roasting pan and massage half of the marinade into the skin. Let it marinate for at least 15 minutes.
  4. Surround the chicken with quartered onion and pour in chicken broth.
  5. Roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C), basting occasionally with remaining marinade.
  6. Let the chicken rest for about 10 minutes before carving.
