  • 1/4 cup panko bread crumbs
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce

  • Pinch of salt
  • 1 large Vidalia onion, diced
  • 4 ounces sliced white mushrooms
  • 1 teaspoon fresh chopped thyme leaves
  • 1/2 teaspoon garlic powder
  • 2 1/2 tablespoons flour or cornstarch
  • 3 cups beef stock
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon butter
  • Kosher salt and pepper (to taste)
  • Chopped fresh parsley or chives

Instructions

  1. In a large bowl, combine ground beef, panko breadcrumbs, tomato paste, Worcestershire sauce, mustard powder, onion powder, pepper, and salt. Mix until just combined and shape into four oval patties.
  2. Heat olive oil in a cast iron skillet over medium heat. Add patties and cook for 2-3 minutes on each side until browned. Remove from the skillet.
  3. In the same skillet, sauté onions until translucent; add mushrooms and cook until softened. Stir in thyme and garlic powder.
  4. Gradually add beef stock while scraping the pan's bottom to incorporate flavor bits. Bring to a boil and thicken with flour or cornstarch.
  5. Return patties to the skillet; simmer in gravy for about 5-7 minutes or until cooked through.
  6. Garnish with parsley before serving over your choice of sides.
