Ingredients

  • 2 cups cooked rice
  • 2 large eggs (room temperature)
  • 1 cup whole milk
  • 1 cup yellow cornmeal
  • 1/2 chopped onion
  • 12 tbsp jalapeno peppers (to taste)
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1/4 cup canola oil
  • 1 can cream-style corn (14.5 oz.)
  • 3 cups shredded cheddar cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In one bowl, mix cornmeal, salt, baking soda, jalapenos, and onion. In another bowl, whisk eggs, milk, oil, and cream-style corn together.
  3. Combine wet and dry ingredients until just blended; gently fold in cooked rice and cheese.
  4. Grease a 10-inch cast-iron skillet with butter and dust with cornmeal. Pour batter into the skillet.
  5. Bake for 45-50 minutes until golden brown and a toothpick inserted comes out clean.
  6. Allow to cool slightly before slicing.
