  • 1 lb medium or large raw shrimp, peeled and deveined
  • 8 small white corn tortillas
  • 1/2 small purple cabbage, shredded
  • 1 large avocado, diced
  • 1/2 red onion, diced
  • 4 oz Cotija cheese, grated
  • 1/3 cup sour cream
  • 1/3 cup mayonnaise
  • 1 ½ tablespoons lime juice
  • 1 garlic clove, pressed or minced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon olive oil
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon Sriracha sauce

Instructions

  1. In a medium bowl, combine the shrimp with garlic, salt, pepper, cumin, and cayenne.
  2. Heat olive oil in a non-stick skillet over medium-high heat. Sauté shrimp for about 1-2 minutes per side until pink and opaque.
  3. Toast tortillas on an open flame or skillet until lightly charred.
  4. Prepare toppings: shred cabbage, dice avocado and onion, chop cilantro.
  5. Whisk together sour cream, mayo, lime juice, garlic powder, and Sriracha in a small bowl.
  6. Assemble tacos by placing shrimp on tortillas and adding desired toppings along with sauce.
