  • 3/4 cup (150g) packed light or dark brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 large egg, at room temperature
  • 2 teaspoons pure vanilla extract
  • 2 cups (250g) all-purpose flour, spooned & leveled
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup (135g) white chocolate chips, plus a few extra for garnish
  • 1 cup (140g) dried cranberries, plus a few extra for garnish

Instructions

  1. Preheat your oven to 350°F (177°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, cream together softened butter, brown sugar, and granulated sugar until smooth. Beat in the egg and vanilla extract.
  3. In another bowl, whisk together flour, cornstarch, baking soda, and salt. Gradually mix this dry mixture into the wet ingredients until combined.
  4. Fold in white chocolate chips and dried cranberries.
  5. Chill the cookie dough for at least 1 hour before baking.
  6. Scoop dough onto prepared sheets, spacing them about three inches apart.
  7. Bake for 11–12 minutes until edges are lightly browned but centers remain soft. Let cool slightly before transferring them to a wire rack.
