- 2 cups + 1 Tablespoon all-purpose flour
- 200 grams sourdough discard (unfed, at room temperature)
- 1 egg (lightly beaten)
- Fresh herbs (parsley or rosemary)
- 1 teaspoon garlic powder
- Unsalted butter (melted and softened)
- Kosher salt
- Flaky sea salt for topping
Instructions
- In a stand mixer bowl, combine warmed milk, yeast, and sugar. Add flour, sourdough discard, beaten egg, herbs, salt, garlic powder, and melted butter.
- Mix on low to form a shaggy dough; then knead until smooth and slightly tacky.
- Place in a greased bowl covered with plastic wrap; let rise until doubled in size (60–90 minutes).
- Prepare the topping by mixing softened butter with herbs and garlic powder; set aside.
- Once risen, divide dough into pieces; flatten each and spread with the butter mixture before folding and placing in the loaf pan.
- Let rise again until puffed (30–45 minutes), then preheat oven to 350℉.
- Bake for about 30 minutes; cover with foil if browning too quickly. Brush with remaining butter mixture before serving.
