  • 1/4 cup unsalted butter (softened, for honey butter)

Instructions

  1. Preheat oven to 400°F (200°C) and grease a mini muffin tin.
  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, mix buttermilk, eggs, and melted butter until smooth.
  4. Combine wet ingredients with dry ingredients; stir until just mixed.
  5. Gently fold in corn kernels and cheddar cheese.
  6. Spoon batter into muffin tin cups until about two-thirds full.
  7. Bake for 12-15 minutes or until golden brown; a toothpick inserted should come out clean.
  8. While baking, mix softened butter with honey to create honey butter.
