  • 0.75 lb boneless, skinless chicken breasts
  • ¼ cup lime juice
  • 1 tsp garlic powder
  • 4 large tortillas
  • 1 cup uncooked rice
  • 1 small red bell pepper
  • ¾ cup corn kernels
  • 1 cup black beans
  • ¼ cup cotija cheese
  • ⅓ cup sour cream

Instructions

  1. Marinate diced chicken in lime juice, olive oil, and seasonings for at least 15 minutes.
  2. Cook rice according to package instructions while marinating.
  3. Sauté marinated chicken in a skillet over medium heat for about 12–15 minutes until cooked through.
  4. Sauté chopped red bell pepper and onion in the same skillet until tender.
  5. Assemble wraps by layering rice, chicken, sautéed veggies, corn, beans, cheese, and sauce in tortillas.
  6. Roll tightly and serve with your choice of salsa or guacamole.
