Ingredients
- 1 batch cilantro lime rice or Vegan Mexican Rice
- 1 can black beans
- 1 avocado
- 1 red pepper
- 1 orange pepper
- 1 batch spicy tahini dressing
- 1 block extra firm tofu
- 2 tablespoons sriracha
- 1 tablespoon olive oil
- 3 tablespoons corn starch or arrowroot starch
- 1–2 teaspoons coconut sugar or brown sugar
- 1 teaspoon paprika
- 1 1/2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1/4 teaspoon chili powder
- 1/2–1 teaspoon salt
Instructions
- Preheat your oven to 400°F.
- Press the tofu between towels and place something heavy on top for 5–10 minutes.
- Mix coconut sugar, corn starch, paprika, garlic powder, onion powder, chili powder, and salt in a bowl.
- Cut the pressed tofu into cubes and toss them with half the olive oil and sriracha mixture.
- Coat with the spice mixture.
- Line a baking sheet with parchment paper, spread the tofu on one side, and place sliced peppers on the other side. Drizzle olive oil over the peppers.
- Bake for 20 minutes; brush remaining sriracha mixture over tofu and bake for an additional 10–15 minutes until crispy.
- Assemble your burrito bowl with rice, black beans, roasted peppers, crispy tofu, avocado, and dressing.
