  • 1 ½ cups graham cracker crumbs
  • 6 tablespoons unsalted butter (melted)
  • 2 packages cream cheese (8 oz each)
  • 2 large eggs
  • ⅓ cup granulated sugar
  • 2 cups diced strawberries
  • ¾ cup all-purpose flour
  • ¼ cup light brown sugar

Instructions

  1. Preheat oven to 350°F and line a 9×9-inch baking dish with parchment paper.
  2. In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until it resembles wet sand. Press firmly into the bottom of the dish.
  3. In a large bowl, beat cream cheese, eggs, sugar, vanilla extract, and salt with a hand mixer until smooth. Spread evenly over the crust.
  4. Evenly distribute diced strawberries on top of the cheesecake layer.
  5. In another bowl, combine flour, brown sugar, and salt; stir in melted butter to create a crumble. Sprinkle over strawberries.
  6. Bake for 35–40 minutes or until set in the center. Cool completely on a wire rack before refrigerating for an hour.
