Ingredients
- 1 pound rotini
- 1 pound lean ground beef
- 15 ounces canned black beans (drained and rinsed)
- 8 ounces canned corn (drained)
- 2 cups shredded Fiesta blend cheese
- 16 ounces Catalina dressing
- 3 tablespoons sour cream
- 9 ounces Nacho Cheese Doritos (crushed)
- 2 cups shredded iceberg lettuce
- ¼ cup chopped cilantro
Instructions
- Cook rotini according to package instructions until al dente. Drain and rinse under cold water.
- Brown ground beef in a skillet over medium heat, then drain excess grease. Stir in taco seasoning and water; cook until liquid evaporates.
- In a large bowl, mix cooked pasta, seasoned beef, black beans, corn, diced onion, cherry tomatoes, and cheese.
