  • 4 boneless, skinless chicken breasts or thighs
  • ¼ cup creamy peanut butter
  • ¼ cup soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • ½ cup coconut milk
  • 2 tablespoons honey
  • 1 tablespoon sriracha (adjust to taste)
  • 2 tablespoons vegetable oil

Instructions

  1. Heat the oil in a skillet over medium heat. Season chicken and cook for about 6-7 minutes per side until golden brown. Remove from skillet.
  2. In the same skillet, sauté garlic and ginger until fragrant. Lower heat and stir in peanut butter, soy sauce, coconut milk, honey, sriracha, and lime juice until smooth.
  3. Return the chicken to the skillet and coat with the sauce. Simmer on low for a few minutes.
