  • 2 x 5oz cans tuna (drained)
  • 1 medium onion (chopped)
  • 1/2 stalk celery (chopped)
  • 1 clove garlic (minced)
  • 1 tablespoon parsley (chopped)
  • 34 tablespoons mayonnaise
  • 3 tablespoons extra virgin olive oil (divided)
  • 1/3 cup shredded mozzarella
  • Sliced bread
  • Softened butter
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine drained tuna with chopped onion, celery, parsley, minced garlic, mayonnaise, olive oil, mozzarella, salt, and pepper. Mix until well blended.
  2. Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
  3. Butter one side of a slice of bread and place it in the skillet butter-side down.
  4. Spread about 2 tablespoons of the tuna mixture on top of the bread in the skillet.
  5. Butter another slice of bread and place it on top of the tuna mixture.
  6. Cook until golden brown on one side; carefully flip the sandwich using a spatula to grill the other side until golden.
